    An All-Star Sake

    At a sake competition composed mainly of younger drinkers, we first noticed the long lines around Takachiyo’s booth, which piqued our curiosity. We then learned why:Takachiyo’s 59 lineup is revolutionizing the sake world. The sakes showcase the Junmai Ginjo Nama, and all use the same milling percentage on the rice (59%) and the same sake yeast strand across rice varieties. The result is an incredible sake lineup. 

    Our favorite, the Chapter 7, is sharp and lively with Meyer lemon notes, electric acidity, and a memorable finish. Only a limited amount of bottles are available, direct from the brewery in Japan! When it comes to finding the right pairing, this sake is ideal with baked butternut squash, persimmon salad, and even pan-seared halibut with a lemon sauce.

    In the Japanese sake market, where domestic consumption is decreasing due to new generations opting for other beverages, it’s heartwarming to see producers evolving to become more compelling and keep the art of sake alive.
