    At first, we noticed the long lines around the Takachiyo. booth at a sake competition composed mainly by younger sake drinkers, which piqued our curiosity. We learned Takachiyo is revolutionizing the sake world with their 59 lineup which showcases the variety capable in Junmai Ginjo Nama sake. Each of their unique bottlings uses the same milling percentage on the rice and the same sake yeast with a different rice strain. We tasted through the whole line up the last two years and managed to secure a small amount for our members of our personal favorite: Takachiyo 59 Chapter 6 Miyamanishiki.  

    Chapter 6, the Wine Access exclusive cuvée based around the Miyamannishiki rice variety is fruit-driven with fresh blueberry notes, balanced by a lively texture and cleansing acidity. 

    Direct from the brewery, this gorgeous sake is only available here and is ideal with baked butternut squash, persimmon salad, and even pan-seared halibut with a lemon sauce.
