2022 Inazio Urruzola Blanco Getariako Txakolina Spain
Txakoli is a vibrant, high-acid wine that provides nice backbone and citrus flavors in a spritz. Refreshing and lively, it’s the ideal springtime white, sometimes with an intriguing whisper of cilantro or jalapeño on the nose. We first tried this classic at the legendary San Sebastián MICHELIN 3-star restaurant Arzak and have been smitten ever since.
2016 Tobias Glen JINSEI Pinot Noir Russian River Valley
Artisan, single-vineyard Russian River Pinot Noir—drinking at its absolute peak—is usually 2016 Tobias Glen JINSEI Pinot Noir hails from a 4-acre postage stamp of a vineyard not far from Kistler’s Vine Hill. It was made by a winemaker handpicked by DRC’s Aubert de Villaine to make his wines in California, and was, until recently, locked up by a high-profile restaurant group in California. It’s a proven ideal match for umami-rich roast chicken and spring vegetables. Fruit-forward, savory in nature, tinged with an herbal edge, it always makes a simply delicious pairing.
2018 Capel Vale Shiraz Single Vineyard Whispering Hill Mount Barker
Dry Riesling has an excellent ability to complement grilled vegetables, including hard-to-pair items like asparagus, fennel, and brussels sprouts. Its chalky mineral notes and ensemble of stone-fruit aromatics make it ideal with the green, charred notes. With the choicest fruit from a tiny hilltop block of an excellent cool-climate vineyard, Capel Vale crafted a Shiraz with effusive aromas and a complex palate that earned 97 points and Best in Show honors at the Decanter Asia Wine Awards, outshining bottles from around the world.

Crafted from 40-year old vines in the best Loire Valley vintage in 30 years or more, we moved quickly to lock in this artisan Sancerre before any restaurants or retailers could claim their share. The herbal, citrusy and lively acid-driven qualities of this bottle pairs perfectly with herbaceous salads with bold flavors—think English peas, Morel mushrooms, dill, arugula, citrus, parsley, cilantro, fennel—by embracing the complexity of the greens, elevating the pairing.
2015 Bodegas Urbina Viura Blanco Rioja Crianza
With its balanced acidity, notes of dried herbs, and dried-fruit components, Rioja (especially with a little age) makes for a lovely match for gamy, fatty, and rich meats. And at this price, you're able to open a perfectly mature, textbook white Rioja any night of the week.
