The winemaking is guided by proprietor Nicole Moncuit’s vision and powered by her daughter Valérie’s steady work ethic, and the pair takes a modern approach in the cellar. They use only stainless-steel tanks for native-yeast fermentation and aging, coaxing the grapes gently and cleanly to their conclusion. Nicole believes this is the best way to showcase their greatest asset—world-renowned terroir—with minimal interference. Simply put, Moncuit is all about the raw materials, no more and no less.

We certainly won’t question the judgment of the woman who has been making grower-Champagne par excellence since 1977. Instead, we'll count our lucky stars that we get access to her Champagnes.
