    MICHELIN-Level Champagne Connection

    For over 20 years, Jacques Diebolt’s brilliant Blanc de Blancs Champagne has graced the cellars of many of Paris’ most celebrated MICHELIN stars. But it was only after purchasing a number of small plots on some of the most expensive vineyard land in the world that Diebolt had a sufficient supply to furnish America’s finest restaurants.

    Thomas Keller’s The French Laundry was among the first few MICHELIN three-star restaurants in the U.S. to feature these chiseled Champagnes, and the Blanc de Blancs became an anchor glass-pour for YEARS.

    Many years ago, we met Jacques Diebolt at his modest home in Champagne. As had been the case for all our visits to the underground cellars of Diebolt-Vallois, our first tasting lasted over four hours, concluding with one of the more miraculous Champagnes we’ve ever tasted, a 1953 that had been vinified by Jacques’ father. 

    Jacques told us that just two restaurants, L’Espérance and Gerard Vie’s two-star Les Trois Marches in Versailles, purchased nearly half of the entire annual production of Diebolt-Vallois. While he had been solicited by a number of sommeliers managing some of the most iconic lists in Paris, he simply didn’t have enough to go around.

    By 2008, after countless tiny land purchases in Mesnil, Chouilly, and other prestigious villages—acquisitions better measured by the row than the acre—the production of Diebolt-Vallois had nearly doubled. It wouldn’t be long before many three-star addresses in Paris, including the Four Seasons George V, Le Bristol, Le Crillon, and Le Pré Catalan, had adopted Jacques’ chiseled Blanc de Blancs as their own.  

    Firm and racy, with brilliant tension and a lingering finish, this is simply a stunning Champagne.
