Two years ago, we spent more than ten months in hot pursuit of the award-winning HEAVENSAKE Junmai Daiginjo. When we finally offered it to our members, it became our single bestselling sake of all time.
We’re now thrilled to offer that legend’s excellent stablemate, the HEAVENSAKE Junmai 12 Hyogo.
A collaboration between Maison Rare Champagne winemaker Regis Camus and Konishi—Japan’s oldest family-run brewery, founded in 1550—it’s a standby at MICHELIN-starred hotspots like New York’s Sushi Nakazawa, Hakkasan, Yuba, and Tao, and it delivers a complex, meditative introduction to their craft.
Champagnes made by Regis Camus typically cost $100 or more, and his blending skill and dedication to quality have made HEAVENSAKE an important presence in the fine-dining world.
Combining the highest-quality Yamadanishiki rice, local Hyogo water, and proprietary filtering techniques with Champenois blending artistry, this expertly crafted sake matches beautifully with sushi, classic European fare, or other foods.
This bottling is a junmai, meaning that some of the rice in the blend is polished to 70%, giving a rounder, more generous profile than the more elegant junmai daiginjo. It has a bright, clear, slight copper-platinum hue and has excellent legs. The aromas transport the senses to a pine-blanketed mountain, with damp forest floor, mandarin orange spice, and cedar. The mouthfeel is silky and broad, with a brightnessl that leads to a long finish.
