In the heart of Champagne, the Forest-Marié family carries forward a winemaking tradition that spans nine generations. Their Brut de Blancs represents the culmination of their expertise, crafted from carefully selected Chardonnay grapes grown across their 86 meticulously tended plots in Ecueil, Sacy, and Trigny—where varying compositions of chalk, clay, and siliceous limestone contribute to the wine's distinctive character.
These 40-year-old vineyards are maintained using sustainable practices, with three decades of mulching building soil biodiversity and improving water retention. As récoltants-manipulants, the family controls every aspect of production in their facility, from harvest timing through pressing and aging, selecting only the finest juice from the first pressing for their wines.
Their hillside cellars in Trigny provide optimal temperature and humidity for the wine's evolution. Using only the precious first pressing (the "cuvée"), the wine undergoes its primary fermentation in a combination of vats and traditional foudres, adding layers of complexity to the final blend. The family's patience truly shines through in their aging protocol—while many producers rush their wines to market, Forest-Marié insists on a minimum of three years of lees aging, with most cuvées resting for five years or more in their cool, humidity-controlled cellars.
