    Albert Bichot’s ultimate everyday bubbles do exactly that. Champagne and Burgundy share the same marquee grapes, Pinot Noir and Chardonnay. Crémant de Bourgogne must be made in the méthode traditionelle, meaning it follows the same protocol as Champagne, complete with many of the same strict rules (including hand-harvesting in whole bunches, and the same pressing protocols). 

    The sixth generation of the Bichot family to steward the family’s vines, Albéric Bichot has set out to demonstrate that crémants are truly great wines that compete with the region’s lauded Pinots and Chardonnays. This one, sourced from organically-farmed calcareous clay soils in the Châtillonnais and Côte Chalonnaise et Mâconnais, is a standout that leans heavily on citrusy Chardonnay, supported by Pinot Noir. After two years of aging, it’s developed a beautiful golden tone, lacy mousse, and irresistible layers of golden apple and citrus on the palate.
