    Does any name in Chablis carry more weight than Fèvre? 

    The family has been producing wine in the region for over two centuries. Domaine William Fevre—just snapped up by Domaines Barons de Rothschild—is one of the most sought-after Chablis labels, and two separate generations of Fèvres have held the elite position of winemaker at La Chablisienne, one of the most respected co-ops in the country. 

    The 2023 Fevre-Fevre is as good of a buy as you’ll find in expertly rendered, classic Chablis. Grown in a vintage that Decanter rated 4 out of 5 stars, the team of Gilles and Nathalie Fevre absolutely NAILED this one, which shows the beautiful detail and transparency we love in the region. 

    Back in 2003, Nathalie and Gilles Fèvre decided to stop selling their best fruit to Chablis’ renowned co-op, La Chablisienne. It wasn’t an easy call. Nathalie was the chief enologist there for 12 years, after all, and her husband Gilles’ great-grandfather was one of the founders. But the Fèvres knew their fruit was too precious to be blended into anonymity. 

    The pair is based in the heart of Chablis, with access to prime vineyards all over the region. Sourced from parcels situated on high plains or steep hills, the grapes that went into this wine grow on stony soils rich in Kimmeridgien limestone. Most of Fèvre’s vineyards are between 15 and 25 years old—some, planted by Nathalie’s great-grandfather, are 75 years of age—and they put out gorgeously concentrated fruit. 

    The wine was aged for 10 months on the fine lees in stainless steel, preserving the wines Chablisienne vibrancy. Pair it with a Dungeness crab risotto, a plate of oysters, or a salmon salad.
