A Revelatory Blend from a Dynamic Producer
When Val Cantú’s two-MICHELIN–starred Californios unveiled the Tres Raices Nebbiolo Sangiovese to us wine as a guest favorite, it confirmed what we’d been hearing from insiders on our trips to Mexico: the Guanajuato region was ready for its close-up. This isn't just another New World interpretation of Italian varieties—it's the result of four centuries of winegrowing heritage reborn through modern innovation.
This sophisticated blend emerges from Guanajuato's sun-drenched central highlands, where Spanish missionaries first planted vines 400 years ago. Today, this historic terroir—just outside the colonial jewel of San Miguel de Allende—hosts Mexico's fourth-largest and fastest-growing wine region, with Tres Raices leading the vanguard of quality-focused producers.
In the glass, this bottling marries Nebbiolo's structural elegance with Sangiovese's bright fruit character. Each cluster is meticulously harvested by hand, with separate vinification in temperature-controlled stainless steel allowing both varieties to express their unique personalities during the 20-25 day maceration. Ten months in French and American oak, followed by extended bottle rest, yields a wine of remarkable poise and integration.
Founded in 2016 by three visionary Mexican entrepreneurs, Tres Raices represents the exciting future of Mexican wine. Under the guidance of talented winemaker Alejandra Cordero, their 26-hectare estate exemplifies the region's commitment to excellence.
This bold blend has found a home at Californios, on one of America's most carefully curated wine lists, alongside dishes like their quail taco and camote—a nixtamalized sweet potato—where its well-knit tannins and big personality shine alongside their bold flavors.
