The Many Benefits of Age
When a Burgundy house as old as Maison Champy sets out to make a signature bottling you can bet it’s gonna be great.
Founded in 1720, they’re the oldest company in the region still operating—and they’ve thrived over the years thanks to an abiding attention to detail plus deep relationships with key growers all along the Côte d’Or.
And for their Cuvée Edme Bourgogne Blanc, they assemble an all-star collection of terroirs to deliver a classic Burgundian experience in the glass. They start with Chardonnay from near the towns of Puligny and Meursault—two of the most famous places in the world to grow the grape. There’s a minerality and gravitas to wines from that part of Burgundy, which combine power and vibrancy like nowhere else.
Those wines are fermented and aged in barrel—the traditional way to handle high-end white wines from the Côte d’Or, where they hail, and they’re blended with lots from Rully in the Côte Chalonnaise, which is farther south. Those wines are aged in stainless steel and provide pure fruit flavors and a richer texture.
In the outstanding 2022 vintage, which was a warm year balanced out by some perfectly time rains in August, Champy produced this bottle that absolutely wowed us. Pair it with a roast chicken perfumed with thyme and lemon zest or a nice piece of grilled fish.
