    Opportunity Knocks

    For Bill True, the timing could not have been more perfect. 

    It was late 2020, and he and his winemaker Brian Graham had their ear to the ground, seeking fruit for their nascent B True label. Graham, a veteran working 20+ years of industry contacts, struck gold when he connected with a friend at one of Knights Valley’s most iconic wineries—whose bottles fetch $250 and even more.

    Two of the estate’s most reliable sales channels, MICHELIN-level spots and Relais & Chateaux–level resorts, had been pinched by the pandemic, so the winery had decided to trim production. The upshot: The friend could offer Graham a one-and-done deal on Sauvignon Blanc and Sémillon grapes from their exquisite Knights Valley acreage—grapes that would NEVER be available in a normal year—and Graham pounced. 

    After making a pilot bottling of Cabernet in the 2018 vintage, Bill and Brian set out with their first slate of bottlings—this 2020 Cuvée Blanc is their first official release. While they do plan to make future vintages Cuvée Blanc, the 2020 is almost certainly the only vintage that will be made from this precious Knights Valley source.

    Brian drew upon his Bordeaux training to make the 2020, pressing whole clusters of Sauvignon Blanc and Sémillon, fermenting the wine in steel tanks, and aging it in neutral oak, allowing it to go through 80% malolactic conversion. The result is the best of California in a Bordeaux-style white: clean, elegant, herbaceous, and perfectly balanced. They made just 240 cases. It’s a micro-production debut from a winery on the rise, and we’re proud to bring it to you.
