    How Is Chitry Still a Secret?

    Why does every white-wine lover in the world know Chablis—yet Chitry, just 13 minutes to the southwest, remains anonymous? 

    It’s because, for most of its history, a farmer in Chitry would earn more by planting cherry trees than grapevines. The fruit ripened beautifully there, and the town was close to the market in nearby Auxerre. So, many families simply stuck with cherry-growing.

    Not the Morins, who have always been dedicated to the vine, and they’re behind one of the most thrilling white-wine discoveries we’ve made in Burgundy. The 2019 Olivier Morin Constance Bourgogne Chitry Blanc, grown on chalky soils similar to the Premier Crus and Grand Crus of Chitry’s more famous neighbor, is a ringer for a top-class village Chablis. 

    We discovered this wine at a blind tasting for sommeliers put on by the BIVB, a trade association promoting the wines of Burgundy. The one line we heard over and over as the sharp-suited pros put down their glasses was:

    "This has got to be Chablis."

    When the wine was revealed to be the 2019 Morin, it all made sense—but only to the few familiar with Chitry. Olivier Morin’s grandfather was the first in the village to plant Chardonnay, and his grandfather was the first to domaine-bottle wine there. Returning to the family farm in 1992, Olivier has maintained Morin's reputation as a standard-bearer for the appellation. He farms his vineyards meticulously while honoring the environment, with the winery on track to become certified organic this year.

    This wine is like catnip for white-Burgundy fans, and while it drinks fabulously now, it can easily age another five years or more.
