Our First MICHELIN Club Selection
When we put together our first-ever collection of wines for our MICHELIN club, Francine and Oliver Savary’s Chablis was an easy first choice. “Every sommelier has a nice Chablis up their sleeve,” said Charlotte Randolph, the Beverage Director at two-starred Californios, who helped curate the collection, “now your members can too.”
If MICHELIN-starred sommeliers aren’t your gold standard, then consider that Savary has the imprimatur of both star importer Kermit Lynch and also Jean-Marie Raveneau of Domaine Raveneau, whose $1600 bottles are among the most coveted wines in Chablis. The 2019 Savary Chablis is exactly the sort of locally-famous bottle that we’re always on the hunt for when we’re in Europe—and it’s prompted quite the frenzy back at the office.
Our Head of Wine, Master of Wine Vanessa Conlin, declared the wine team “completely obsessed” with the bottle, saying, “it’s really rare to see samples hoarded this aggressively.” Yet bottles keep sneaking away from the office…
This is a wine that hugely overdelivers, boasting Premier Cru quality at a regional price—a signature of the Savary family, who Kermit Lynch describes as one of the most hard-working in the area. Never satisfied with making run-of-the-mill wine, they've refined their farming and winemaking every year since Domaine Savary’s founding in 1984, earning regional acclaim and the respect of producers like Raveneau.
