"Exotic" and "Vivacious" Calistoga Instant Classic

We are proud to introduce, the "exotic" Perliss The Ravens from our good friend (and peerless Bordeaux-inspired winemaker) Aaron Pott. The latest Perliss The Ravens builds on the reputation of this incredible vineyard site in California with a dense, opulent Cab destined for a serious evolution in the cellar… or decanted by the grill this spring. 

Aaron is one of the few Americans to have worked at the highest level in Bordeaux, at two Grand Cru Classé estates in St.-Émilion in addition to making his name as a Winemaker of the Year in Napa Valley (Food and Wine Magazine). 

The Ravens Vineyard in Calistoga is home to the Perliss family, and has been for a quarter century. Their organically farmed, cane-pruned vines yield exceptionally concentrated berries (with pest control maintained by birds, bats, ladybugs, and a retired racing greyhound). From there Aaron works to show off the beauty of the land and fruit with his delicate winemaking and aging in French Oak barrels.

There’s classicism behind the deft technique in this wine, which teases out the subtleties of the Cab and warm, Calistoga site. Exotic spices and gravelly undertones offset the luscious fruit that 2018 produced valley-wide. The brooding dark berries are persistent from nose to finish. With less than 350 cases made we hope you grab what you can now, before the wine is…. nevermore.
